Zucchini boats

 


Ingredients

・Zucchini: 1


・Salt: A pinch


・Shirasu (baby sardines): 2 tbsp


・Corn: Appropriate amount


・Mayonnaise: 1 tbsp


・Salt & black pepper: A pinch of each


・Pizza cheese (shredded cheese): 30g


Instructions


1. Cut the zucchini in half lengthwise and make shallow cuts in the flesh. Scoop out the inside with a spoon.

2. Sprinkle salt over the zucchini shells and the scooped-out flesh, then let sit for a while. Pat dry with a paper towel and coarsely chop the scooped-out flesh.

3. Place the chopped flesh, shirasu, corn, mayonnaise, salt, and black pepper in a bowl and mix well.

4. Stuff the mixture into the zucchini shells and top with the pizza cheese. Bake in an oven (at 200°C for 20–25 minutes) or a toaster oven until browned. It's ready to serve!
