Stir-fried Chicken Breast and Green Peppers in Sweet and Sour Sauce

Ingredients (serves 2):

1 chicken breast (300g)

[A] 1 tbsp sake

[A] 1 tsp grated ginger

2 tbsp potato starch

2 tbsp vegetable oil

4 green bell peppers

[B] 3 tbsp ponzu sauce

[B] 1/2 tbsp water

[B] 2 tsp sugar

Instructions:

① Slice the chicken breast into bite-sized pieces using a diagonal cutting technique (*sogi-giri*). Add [A], massage the mixture into the meat, let it sit for about 10 minutes, and then coat with potato starch. Heat the vegetable oil in a frying pan over medium heat and pan-fry the chicken until golden brown. Remove the chicken from the pan once cooked.

② Add the green bell peppers (cut into irregular chunks) to the same pan and sauté over medium heat.

③ Once the peppers have browned slightly, return the chicken to the pan. Add [B] and stir-fry everything together, coating the ingredients in the sauce and cooking until the liquid has mostly evaporated. It's ready to serve!

Sprinkle with white sesame seeds before eating, if desired.
