Simmered daikon radish and mackerel

 


Ingredients:


1/4 daikon radish


1 can (160g) canned mackerel in brine


[A] 1 cup water


[A] 1 tablespoon soy sauce


[A] 1 tablespoon mirin


[A] 1 teaspoon grated ginger


1/2 tablespoon sesame oil



Instructions:


① Peel the daikon radish and cut it into 1cm thick slices. Place in a heatproof bowl, cover loosely with plastic wrap, and heat in a 600W microwave for 5 minutes. Once cooled slightly, pat dry with a paper towel.


② Heat the sesame oil in a frying pan over medium heat, then add the daikon radish from step ①. Once browned, add the ingredients from [A] and the canned mackerel with its liquid.


③ Cover with a lid and simmer for about 8 minutes.  It's ready!


Serve topped with finely chopped green onions if desired!
