Blanched rapeseed greens

 


[Ingredients for 4 servings]


* Rapeseed blossoms: 1 bunch


* Salt (for boiling): a pinch


* Bonito flakes: 4-5g


* Soy sauce: to taste


<Combined broth>


* Dashi stock: 200ml


* Mirin: 2 teaspoons


* Salt: a pinch


[Preparation]


* Cut off the tough ends of the rapeseed blossoms and soak them in plenty of water for 10 minutes to remove bitterness.


[Instructions]


1. Quickly blanch the rapeseed blossoms in boiling salted water. Transfer to cold water and let cool. Squeeze out excess water. Cut into bite-sized pieces and soak in the combined broth. Just before serving, lightly squeeze out the excess broth, arrange on a plate, top with bonito flakes, and drizzle with soy sauce.
