Spinach with mustard soy sauce dressing

 


Ingredients for 2 servings]


* Spinach: 1/2 bunch


* Enoki mushrooms: 1 bunch


<Mustard Soy Sauce>


* Prepared mustard: 1/2 to 1 teaspoon


* Dashi soy sauce: 2 teaspoons


[Preparation]


* Cut off the roots of the enoki mushrooms.


* Mix the ingredients for the <mustard soy sauce> in a bowl.


[Instructions]


1. Quickly blanch the enoki mushrooms in boiling water, drain them in a colander, and cut them in half lengthwise.


2. Quickly blanch the spinach as well, transfer it to cold water, squeeze out the excess water, and cut it into 3cm lengths.


3. Add (1) and (2) to the bowl with the <mustard soy sauce> and mix well. Serve in a dish.
