Spring rolls with new potatoes and broccoli

 


Ingredients


Spring roll wrappers…6 mini or 4 regular

Potato…1 small

Broccoli…2-3 florets

Mayonnaise…1 tablespoon

Black pepper…to taste

Salt…to taste

Oil…3 tablespoons


Instructions


1. Roughly chop the potato and broccoli and mix with mayonnaise and black pepper.

2. Place the mixture from step 1 onto a spring roll wrapper, roll it up, and seal the end with water.

3. Heat the oil to 170°C and fry the spring rolls with the sealed side down until golden brown on both sides.

4. Serve with salt to taste.
