Ingredients (for 2 servings)
Cold cooked rice… 2 bowls (approx. 300-400g)
Eggs… 3
Salt… 1/2 teaspoon
Pepper… a pinch
Vegetable oil… 2 tablespoons
Green onions (finely chopped)… 2 stalks
Instructions
1. Separate the eggs into yolks and whites. Place only the yolks in a bowl. Loosen the rice, ensuring there are no large clumps.
2. Add the rice to the bowl with the egg yolks and mix well with a spoon or your hands (ensure each grain of rice is thoroughly coated with egg yolk).
3. Heat the vegetable oil in a frying pan over medium heat. Once the oil is slightly warm, add the rice mixture from step 2.
4. Reduce the heat to low and stir-fry, constantly pressing, flipping, and loosening with a spatula, until the rice is dry, slightly sizzling, and making a crackling sound.
5. Continue to sauté over low heat until the rice grains are fluffy and golden brown.
6. Season with salt and pepper, and quickly mix everything together. Turn off the heat, lightly sauté with the residual heat to bring out the aroma, then transfer to a serving dish and sprinkle with chopped green onions.
