Potato and broccoli salad

 


1. Peel the sweet potatoes in places, slice them into rounds, and soak them in water for a sufficient amount of time. If they are cut too thick, they will not cook properly, so it is best to aim for a thickness of about 1-1.5cm.


Cut the broccoli into small florets and microwave until slightly firm. I used 600W for about 1.5 minutes. Slice the garlic and cut the bacon into bite-sized pieces.


2. Add olive oil to a frying pan and arrange the wet sweet potatoes without draining them. Turn on the heat and cook slowly on both sides.


3. Next, add the broccoli, garlic, and bacon and mix gently.


4. Cover and cook for about 3 minutes. When the time is up, open the lid, add the herb salt, and stir-fry until cooked through. Transfer to a plate and sprinkle with black pepper to serve.
