Rich egg salad with cucumber and fish cake

 


Ingredients:

1 cucumber

3 chikuwa (fish cakes)

2 tablespoons mayonnaise

1/4 teaspoon soy sauce

1/5 teaspoon salt

Pepper to taste

1 packet (approx. 2g) bonito flakes

2 hard-boiled eggs

Tempura scraps to taste


Instructions:


① Slice the cucumber thinly, sprinkle with salt (not included in the ingredients list, 1/4 teaspoon), and squeeze out the excess water once it has softened.

② Slice the chikuwa diagonally.

③ Add ①, ②, and all of [A] to a bowl and mix well.

④ Serve ③ in a dish, add the hard-boiled eggs cut into quarters and the tempura scraps, mix quickly, and it's done!
