Ingredients (Serves 4)
- 1 stalk of broccoli
A) 2 eggs
A) 2 tablespoons grated cheese
A) 1 tablespoon mayonnaise
*Depending on the size of the broccoli, there may not be enough egg mixture. In that case, add 1 tablespoon grated cheese and 1/2 tablespoon mayonnaise per egg.
- Salad oil, to taste
<Directions>
[1] Separate the washed broccoli into small florets. *In this case, one floret was large, so I cut it into bite-sized pieces. Adjust the pieces to fit your needs.
[2] Place the broccoli in a heat-resistant bowl, loosely cover with plastic wrap, and microwave for 2 minutes and 30 seconds at 600W.
[3] While the mixture is heating, mix (A).
[4] Once the mixture is done, lightly mash the broccoli with the bottom of a cup.
[5] Dip the broccoli in the egg mixture from [3] and fry in a frying pan lightly coated with salad oil.
[6] Once both sides are browned, it's done. Serve with ketchup or whole grain mustard, if desired.
