Spring cabbage and new onion coleslaw

 


Ingredients (Serves 2):

1/2 head of spring cabbage


1/2 spring onion


50ml water


1/5 teaspoon salt


1 teaspoon salad oil


[A] 2 tablespoons mayonnaise


[A] 1 teaspoon lemon juice


[A] 1/5 teaspoon salt


[A] Black pepper, to taste


Directions:


1. Remove the core from the spring cabbage and place the leaves one by one in a heat-resistant bowl. Add water and salt, cover with plastic wrap, and microwave at 600W for 1 minute 30 seconds to 2 minutes until softened. Once cooled, squeeze out any excess water.


2. Place the cabbage (cut into 5mm widths) and thinly sliced ​​spring onion in a bowl, drizzle with salad oil, and mix thoroughly.


3. Add the previously mixed [A] to the cabbage (2), mix well, and you're done!
