Ingredients (2 servings)
New potatoes…200g
Carrots…30g
Snap peas…6
Corn…40g
Ham…40g
Salt and pepper…a pinch
Mayonnaise…1 tablespoon
Milk…1 teaspoon
Instructions
[1] Peel the new potatoes and cut them into 2cm cubes. Place them in a heatproof container. Cut the carrots in half lengthwise, remove the strings from the snap peas, and place them on top of the potatoes. Cover loosely with plastic wrap and heat in a microwave (600W) for 6 minutes.
Meanwhile, cut the ham into thin strips and drain the corn.
[2] After heating, remove the plastic wrap and mash the potatoes with a potato masher. Cut the carrots into 5mm slices and the snap peas into 1cm slices.
[3] Add the milk, mayonnaise, salt, and pepper and mix. Add the carrots, snap peas, corn, and ham and mix further. Adding milk results in a moist potato salad.
Serve in a bowl and sprinkle with freshly ground pepper to taste.
