Ingredients (for 2 servings)
3 fillets of Spanish mackerel
1/3 teaspoon salt (1% of the weight of the mackerel)
<Seasoning>
1 tablespoon sake
1 teaspoon soy sauce
1 teaspoon ginger juice
Cornstarch (as needed)
Frying oil (as needed) 1/2 bag arugula
[Preparation]
Cut each fillet of mackerel into 3-4 pieces and sprinkle salt on both sides. Trim the roots off the arugula and cut into 2-3 equal lengths.
[Instructions]
1. Mix the ingredients for the <Seasoning> in a bowl, pat the mackerel dry, coat with the mixture, and marinate for 15 minutes, turning occasionally.
2. Pat the mackerel dry with a paper towel and coat with cornstarch.
3. Heat the frying oil over medium heat, add the mackerel fillets, and fry until golden brown, turning occasionally. Drain the oil and place in a dish topped with arugula.
