Ingredients
* Chicken tenderloin…4 pieces
* Ponzu soy sauce…2 teaspoons
* Egg…1
* Parmesan cheese…1 tablespoon
* Grated garlic…1/4 teaspoon
* Flour…1 tablespoon
* Black pepper…to taste
* Salad oil…1 tablespoon
* Broccoli…60g (boiled)
* Cherry tomatoes…2
* Ketchup, tartar sauce…to taste
Instructions
1. Remove the sinews from the chicken tenderloin. Pinch the sinews of the chicken tenderloin and make cuts along both sides with a knife to remove them. After removing the sinews, cover with plastic wrap and lightly pound with a rolling pin, mortar and pestle, or the bottom of a bottle to a thickness of about 1 cm.
* It is easier to remove the sinews if you run the knife along them.
2. Season the chicken. Mix the ponzu soy sauce and grated garlic in a tray, add the chicken tenderloin and mix well. Once lightly seasoned, sprinkle with black pepper and coat with flour.
3. Cook in a frying pan
Break the eggs into a bowl and mix in the grated cheese. Dip the chicken fillets from step 2 into the egg mixture. Heat some vegetable oil in a frying pan over medium heat and cook each side for 2-3 minutes.
Once cooked, arrange on a plate with broccoli and cherry tomatoes. Serve with ketchup or tartar sauce if desired.
