Ingredients (Serves 2)
1/2 can (90g) whole corn
2 medium potatoes
1/2 carrot
1/4 onion
40g broccoli
1 can (70g) can tuna (in oil)
2 teaspoons A-grade consommé (granulated)
5g butter (salted)
200ml water
200ml soy milk (unsweetened)
Black pepper to taste
Directions
1. Dice the potatoes and carrots into 1cm cubes. Roughly chop the onion. Separate the broccoli into florets and then cut in half lengthwise. Drain the tuna. (Make sure the potatoes and carrots are the same size.)
2. Add the drained corn, potatoes, carrots, onion, tuna, water, and ingredients A to a pot, cover, and simmer over low-medium heat for approximately 10 minutes.
3. Add the broccoli and simmer for another minute.
Do not overcook the broccoli to maintain its vibrant color.
4. Reduce the heat and add the soy milk.
5. Once heated through, turn off the heat, transfer to a serving dish, and sprinkle with black pepper to taste.
