Ingredients (Serves 2)
250-300g Frozen Squid
<Condiments>
1 Tablespoon Water
1/2 Tablespoon Potato Starch
A Pinch of Salt
1 Tablespoon Vegetable Oil
1/4 Scallion (Finely Chopped)
1/2 Clove Ginger (Finely Chopped)
A Pinch of Garlic (Finely Chopped)
1/2 Teaspoon Doubanjiang (Chinese Chili Pepper)
<Ketchup Sauce>
2 Tablespoon Sake
1 Tablespoon Mirin
3 Tablespoon Ketchup
1 Teaspoon Sugar
1 Teaspoon Soy Sauce
1/2 Teaspoon Sesame Oil
1/2 Teaspoon Potato Starch
1.5 Tablespoon Chopped Green Onion
[Preparation]
Thaw and drain the squid, then score it along the grid and cut it into bite-sized pieces. Mix the ingredients for the <Ketchup Sauce>.
[Directions]
1. Mix the ingredients for the <Combined Seasoning> in a bowl and coat the squid. Place in a pot of boiling water. Bring to a boil again, then drain in a colander.
2. Add salad oil, white onion, ginger, garlic, and chili bean paste to a frying pan and stir-fry over medium heat until fragrant.
3. Add the <Ketchup Sauce> and the squid from (1) in that order. Once the sauce thickens, transfer to a serving dish and sprinkle with green onions.
