Ingredients
* Bacon…30g
* Broccoli…1/2 head (approx. 125g)
* Onion…1/4 (approx. 50g)
* Water…150ml
* Granulated consommé…1 teaspoon
* Soy sauce…1/4 teaspoon
* Unsweetened soy milk…150ml
* Salt…to taste
* Black pepper…to taste
* Olive oil…to taste
Instructions
1. Cut the bacon into 1cm cubes. Roughly chop the broccoli into approximately 1cm cubes. Roughly chop the onion.
2. Heat olive oil in a pot over medium heat and sauté the bacon, broccoli, and onion.
3. Once the onion has softened, add the water, granulated consommé, and soy sauce. Cover and simmer over low to medium heat for about 5 minutes. 4. Add the unsweetened soy milk and heat until just before boiling, lightly mashing the broccoli. Season with salt.
5. Serve in a bowl and sprinkle with black pepper.
